Gut health Salad

This is an easy ten minute salad that will help keep your blood sugar balanced, benefit your gut, and taste reallllly yummy! Another amazing thing is that it’s easy to make a big batch of it at the beginning of the week, and it keeps really nicely. Let’s get to it!

For the salad:

•1 head of organic kale chopped finely ( I prefer lacinato)

•1/2 head of organic purple cabbage

•1 bunch of organic cilantro

• 1 full can of organic chickpeas

For the dressing:

•1/3 cup of sunbutter, almond butter, peanut butter, or cashew butter

•1 tablespoon of coconut aminos

•4 tablespoons of lemon

•2 tablespoons of ACV

•Few dashes of turmeric

•sea salt and pepper

•1 tablespoon of finely grated ginger

•1 tablespoon of organic honey

• Add about 1 tablespoon of water or to desired thickness

Instructions:

1)Chop up your veggies finely

2)Pour in the chickpeas

3)Combine all your dressing ingredients until smooth

4)Toss salad in your dressing and enjoy!
